I bought a rack of pork today for do-it-yourself pork chops. They ended up a little thicker than my favorite cookbook was looking for. So I baked them a few extra minutes. Still were nice and juicy. I decided to be daring for my main side dish. I bought a can of "hoppin' John" a mix of black-eyed peas, tomatoes, onions and jalapenos. I'm not a big fan of black-eyed peas by themselves, but I like this company's mix of corn, okra and tomatoes a lot, and thought I'd try this. I couldn't really taste the peas, but that's fine. The peas add a different texture to the mix and I like the overall effect. Add a salad, and I'm nicely full with enough pork chop left-overs for several days.
